PERFECT CHOCOLATE CAKE

This is the type of cake you would eat by the handful.

Why do I say that? Because it’s what happened to me.

When calling it a wrap photographing the right-out-of-the-oven chocolate cake and while transferring it from my photography surface to a serving plate, it made a detour to my mouth. Actually several, several detours. (No one was around)

There’s a trend of muddy cakes, which I don’t consider as cakes and which I don’t enjoy. This cake has an almost, and I stress the almost, crunchy exterior with a pillow soft center. Having both cacao and melted quality chocolate, it’s a deep, dark and luxurious.

Is it easy to make? I had three hardworking men installing a new water heater in my home while I was baking the cake, so my attention was surely divided while on task.

Top Tip: Cut the butter into small cubes before turning on the mixer. I missed that step so 1/4-cup sugar and the large slab of butter came shooting out of the mixing bowl when I turned it on.
